Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Preheat the Oven

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, salt, and ground nutmeg until well combined.

Mix Dry Ingredients

Bake the Cakes

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.

In a mixing bowl, beat the softened cream cheese and unsalted butter together until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, beating until well combined and fluffy.

Make the Frosting

Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top, then place the second layer on top of that. Frost the top and sides of the cake with the remaining frosting.

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion, diced carrots, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

Cook the Vegetables

Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for 2 minutes to remove the raw flour taste. Gradually add the chicken broth and milk, stirring constantly until the mixture thickens and bubbles.

Make the Sauce

Stir in the shredded chicken, diced potatoes, frozen peas, dried thyme, salt, and black pepper. Remove from heat and set aside to cool while you prepare the crust.

Combine Ingredients

Preheat your oven to 425°F (220°C). Roll out one pie crust and place it in a 9-inch pie dish. Pour the chicken filling into the crust.

Cover the filling with the second pie crust. Pinch the edges to seal and cut slits in the top crust for steam to escape.

In the same pot, add a little oil if needed, then sauté the chopped onion, garlic, and bell pepper over medium heat for about 5 minutes until softened.

Add the diced tomatoes, black beans, corn, shredded chicken, chili powder, cumin, salt, and black pepper to the pot. Stir well to combine.

Cut the cream cheese into cubes and add it to the pot. Stir until fully melted and incorporated into the soup.

In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and onion powder to create a seasoning mix.

Rub the seasoning mix evenly over both sides of the chicken breasts.

During the last 2 minutes of grilling, brush the BBQ sauce generously over both sides of the chicken.
