In a large bowl, combine olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper. Mix well to create the marinade.

In a small bowl, soak the saffron threads in a few tablespoons of warm broth for about 10 minutes to release their color and flavor.

Prepare the Saffron

Clean and prepare all seafood ingredients. Ensure shrimp are peeled and deveined, mussels are cleaned thoroughly, and calamari is sliced into rings.

Prep the Seafood

In a large paella pan or a wide, shallow skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Sauté Aromatics

Add the minced garlic and chopped red bell pepper to the pan. Sauté for another 2-3 minutes until fragrant.

Stir in the Bomba rice and cook for 1-2 minutes until the rice is slightly toasted. Add the diced tomato, paprika, and soaked saffron along with the broth. Bring to a boil, then reduce heat to a simmer.

Once the rice has absorbed some of the broth (after about 10 minutes), add the shrimp, mussels, calamari, and white fish chunks. Gently stir to combine and distribute evenly.

Cover the pan with a lid and let it simmer for another 10-15 minutes, until the rice is tender and the seafood is cooked through. Avoid stirring to allow a crust to form on the bottom (socarrat).

Once done, remove from heat and let it rest for 5 minutes. Garnish with chopped parsley and serve with lemon wedges on the side.

In a medium saucepan, combine 1 cup of long-grain rice and 2 cups of water. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.

Add 4 cups of milk, 3 tbsp of granulated sugar, 1 tsp of vanilla extract, and a pinch of salt to the cooked rice in the saucepan.

Stir the mixture well and bring it to a gentle boil over medium heat. Reduce the heat to low and let it simmer, stirring frequently, for about 20-25 minutes until it thickens.

Once thickened, remove from heat and stir in 1 tbsp of butter and 1 tsp of ground cinnamon until fully incorporated.

In a large pitcher, pour the entire bottle of dry red wine. This will serve as the base for your Magic Mountain drink.

Add one cup of fresh blackberries and one cup of fresh raspberries to the pitcher with the red wine. Gently stir to combine.

Place your martini glass in the freezer or fill it with ice water to chill while you prepare the drink.

In a cocktail shaker, add 2 oz of gin, 0.5 oz of dry vermouth, and 0.5 oz of ouzo.

Fill the shaker with ice and shake vigorously for about 15 seconds or stir gently for 30 seconds, depending on your preference.

Wash and slice the eggplant, potatoes, and zucchini into 1/4 inch thick slices.

Slice the Vegetables

Sprinkle salt on the eggplant slices and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

In a pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, then sauté until the onion is translucent.

Stir in the canned diced tomatoes, tomato paste, oregano, salt, and black pepper. Let the sauce simmer for 15-20 minutes, stirring occasionally.

In a saucepan, melt the butter over medium heat.

In a greased baking dish, layer half of the eggplant, followed by half of the potatoes, and half of the zucchini. Pour half of the tomato sauce over the vegetables. Repeat the layers.
