    In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, lemon juice, and yogurt. Mix well to create a marinade.

    Add the lamb strips to the marinade. Ensure all pieces are well coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for optimal flavor.

    In a small bowl, mix together minced garlic, mayonnaise, lemon juice, and salt until smooth and well combined. Refrigerate until ready to serve.

Cooking the Lamb

Assembling the Shawarma
