Cooking Rice
1. Prepare the Rice
In a medium saucepan, combine 1 cup of long-grain rice and 2 cups of water. Bring to a boil over medium-high heat.
2. Simmer
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
Making Pudding
3. Combine Ingredients
Add 4 cups of milk, 3 tbsp of granulated sugar, 1 tsp of vanilla extract, and a pinch of salt to the cooked rice in the saucepan.
4. Cook the Mixture
Stir the mixture well and bring it to a gentle boil over medium heat. Reduce the heat to low and let it simmer, stirring frequently, for about 20-25 minutes until it thickens.
5. Add Butter and Cinnamon
Once thickened, remove from heat and stir in 1 tbsp of butter and 1 tsp of ground cinnamon until fully incorporated.
Serving
6. Serve the Pudding
Spoon the rice pudding into serving bowls. Optionally, sprinkle additional ground cinnamon on top and add raisins or nuts if desired.
