    Chop the Vegetables

    Wash and chop the carrots, zucchini, bell peppers, eggplant, and onion into bite-sized pieces. Mince the garlic cloves.

    Prepare the Spices

    In a small bowl, mix the ground cumin, coriander, cinnamon, turmeric, paprika, salt, and black pepper.

    Sauté the Onions and Garlic

    In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the Vegetables

    Stir in the chopped carrots, zucchini, bell peppers, and eggplant. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.

    Mix in the Spices

    Add the spice mixture to the pot and stir well to coat the vegetables evenly.

    Add Tomatoes and Broth

    Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 20-25 minutes, or until the vegetables are tender.

    Finish with Lemon and Parsley

    Once cooked, stir in the lemon juice and chopped parsley. Adjust seasoning with additional salt and pepper if needed.
