Falafel Preparation

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Soak them overnight or for at least 8 hours.

    Blend the Mixture

    Drain the soaked chickpeas and add them to a food processor along with parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

    Add Flour

    Add the flour to the mixture and pulse a few more times to combine. The mixture should hold together when formed into a ball.

    Chill Mixture

    Cover the falafel mixture and refrigerate for at least 1 hour to help it firm up.

    Heat Oil

    In a deep pan or fryer, heat the oil over medium heat until it reaches 350°F (175°C).

    Form Falafel Balls

    Using your hands, form the falafel mixture into small balls or patties, about 1-2 inches in diameter.

    Fry Falafel

    Carefully drop the falafel balls into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy on all sides.

    Drain

    Using a slotted spoon, remove the falafel from the oil and drain on paper towels.

Tahini Sauce Preparation

    Combine Ingredients

    In a medium bowl, combine tahini, minced garlic, lemon juice, water, and salt.

    Whisk Together

    Whisk the ingredients together until smooth. If the sauce is too thick, add a little more water until the desired consistency is reached.
