Kofta Preparation

    Mix the Ingredients

    In a large bowl, combine the ground lamb, chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Shape the Koftas

    Wet your hands with water to prevent sticking and shape the mixture into elongated meatballs or oval shapes, about 5-6 cm long. Place them on a plate once formed.

    Cook the Koftas

    Heat olive oil in a large skillet over medium heat. Add the koftas and cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through.

Couscous Preparation

    Prepare the Couscous

    In a saucepan, bring water to a boil. Add salt and olive oil to the boiling water.

    Cook the Couscous

    Once the water is boiling, remove it from heat and stir in the couscous. Cover the saucepan and let it sit for about 5 minutes until the couscous absorbs the water.

    Fluff and Add Parsley

    After 5 minutes, fluff the couscous with a fork and stir in the chopped parsley. Set aside.
