In a large mixing bowl, combine the ground pork sausage, minced garlic, fresh thyme, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated. Shape the mixture into small sausages, about 2 inches long.

Prepare the Sausages

Heat the olive oil in a large skillet over medium heat. Once hot, add the sausages to the skillet and cook for about 5-7 minutes, turning occasionally until they are evenly browned all over.

Cook the Sausages

While the sausages are cooking, chop the onion and bell pepper. In the same skillet, after removing the sausages, add the chopped onion and bell pepper. Sauté for about 5 minutes until the onion becomes translucent and the bell pepper is tender.

Sauté the Vegetables

Once the vegetables are sautéed, return the sausages to the skillet. Pour in the tomato sauce and stir to combine. Let it simmer for about 10 minutes on low heat.

In a bowl, mix together smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper. Rub this spice mixture all over the pork shoulder.

Season the Pork

Place the seasoned pork shoulder in a slow cooker. Pour apple cider vinegar over the top. Cover and cook on low for 8 hours or until the meat is tender and easily pulled apart.

Cook the Pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir in barbecue sauce. Let it cook for an additional 30 minutes on low.

Heat a skillet over medium heat. Spread butter on one side of each slice of sandwich bread.

Place one slice of bread, buttered side down, in the skillet. Layer with 2 slices of American cheese, followed by a generous portion of the pulled pork mixture. Top with another slice of American cheese and finish with another slice of bread, buttered side up.

Cook the sandwich for 3-4 minutes on one side or until golden brown. Carefully flip it over and cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
