Activate Yeast
In a small bowl, combine warm water (about 110°F or 43°C) with sugar and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt.

Make a well in the center of the flour mixture. Pour in the activated yeast mixture and olive oil. Mix until a dough starts to form.

Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, cooked spinach, mozzarella cheese, Parmesan cheese, minced garlic, and season with salt and black pepper to taste. Mix well until well combined.

Preheat Oven
Preheat your oven to 375°F (190°C).

Shape the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a large rectangle, about 1/2 inch thick.

Spread the filling mixture evenly over the rolled dough, leaving a 1-inch border around the edges.

Starting from one edge, carefully roll the dough into a log shape. Pinch the edges to seal and tuck the ends under.

Place the stuffed bread seam-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown.
