Method
Preparation
- 1
Marinate the Pork Steaks
In a bowl, mix together olive oil, garlic powder, onion powder, paprika, brown sugar, salt, black pepper, cayenne pepper, and apple cider vinegar to create a marinade. Place the pork steaks in a large resealable bag or a shallow dish, pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for the best flavor.
Smoking
- 2
Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C). Once the smoker is ready, add the soaked wood chips to the smoker box or directly on the coals if using a charcoal smoker.
- 3
Smoke the Pork Steaks
Remove the pork steaks from the marinade and let any excess marinade drip off. Place the pork steaks on the smoker rack, ensuring they are not touching each other for even cooking. Close the smoker and smoke the pork steaks for about 1.5 to 2 hours or until they reach an internal temperature of 145°F (63°C).

Rest and Serve
Once cooked, remove the pork steaks from the smoker and let them rest for 10 minutes. This allows the juices to redistribute. Serve the smoked pork steaks with your favorite sides and enjoy!
