Tea Preparation

    Boil the Water

    In a large pot, bring 4 cups of water to a boil.

    Brew the Tea

    Once the water is boiling, remove it from heat and add the 4 black tea bags. Allow the tea to steep for about 10-15 minutes.

    Add Sugar

    After steeping, remove the tea bags and stir in 1 cup of sugar until completely dissolved.

    Cool the Tea

    Let the sweetened tea cool to room temperature before proceeding to the next step.

Fermentation Process

    Prepare the Fermentation Jar

    In a large glass jar, combine the cooled sweetened tea with 2 cups of filtered water.

    Add Starter Tea

    Pour in 1 cup of starter tea into the jar.

    Introduce the SCOBY

    Gently place the SCOBY on top of the liquid in the jar. It may sink initially but will float back up.

    Cover and Ferment

    Cover the jar with a clean cloth or coffee filter secured with a rubber band. Allow it to ferment in a dark, warm spot (around 70-85°F) for 7 to 14 days, depending on your taste preference.

    After 7 days, start tasting the kombucha daily until it reaches your desired level of tartness.
