Chicken Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, mix together the barbecue sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, cayenne pepper, and honey until well combined.

  2. 2

    Marinate the Chicken

Add the chicken quarters to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for the best flavor.

Grilling the Chicken

  1. 3

    Prepare the Grill

If using charcoal, light the charcoal and let it burn until covered with white ash. If using wood chips, soak them in water for 30 minutes before adding to the grill. Preheat the grill to medium-high heat.

  2. 4

    Grill the Chicken

Remove the chicken quarters from the marinade and shake off any excess. Place the chicken quarters on the grill skin-side down. Grill for 10-12 minutes before flipping. Brush with additional barbecue sauce while grilling.

  3. 5

    Check for Doneness

Grill the chicken for an additional 15-20 minutes, or until the internal temperature reaches 165°F (74°C).

  4. 6

    Rest and Serve

Once done, remove the chicken from the grill and let it rest for 5 minutes. Serve with lemon wedges and garnish with fresh parsley.
