In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the ground meat, breaking it apart, and cook until browned. Add the rice, parsley, dill, lemon juice, salt, and pepper. Mix well and cook for another 2-3 minutes. Remove from heat and let cool.

If using jarred grape leaves, rinse them under cold water to remove excess brine. Lay a grape leaf flat, vein side up.

Place a plate on top to keep them submerged. Bring to a boil, then reduce heat to low and simmer for 45-60 minutes until rice is cooked.
