Baklava Preparation

Prepare the Filling

In a food processor, pulse the pistachios, sugar, and cinnamon until finely chopped. Set aside.

Prepare the Phyllo Dough

Thaw the phyllo dough according to package instructions. Preheat the oven to 350°F (175°C).

Layer the Phyllo

Brush a 9x13 inch baking dish with melted butter. Lay one sheet of phyllo dough in the dish and brush with butter. Repeat with 7 more sheets, brushing each with butter.

Add the Filling

Spread a thin layer of the pistachio mixture over the phyllo. Layer 4 more sheets of phyllo, brushing each with butter. Repeat the filling and phyllo layering until all the filling is used, finishing with 8 layers of phyllo on top.

Cut the Baklava

Using a sharp knife, cut the baklava into diamond or square shapes.

Bake the Baklava

Bake in the preheated oven for 45-50 minutes, until golden brown.

Prepare the Syrup

While the baklava is baking, combine water, sugar, honey, and vanilla in a saucepan. Bring to a boil and simmer for 10 minutes. Let cool.

Add Syrup to Baklava

Once the baklava is done baking, pour the cooled syrup over the hot baklava. Let it soak for at least 4 hours, preferably overnight.
