Preheat the Oven

Preheat your oven to 350°F (175°C).

Prepare the Rice

In a medium saucepan, combine Arborio rice and 1 cup of milk. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the rice is tender, about 15 minutes.

Mix the Ingredients

In a large bowl, whisk together the remaining milk, sugar, eggs, vanilla extract, cinnamon, and salt. Stir in the cooked rice and raisins.

Bake the Pudding

Pour the mixture into a greased 2-quart baking dish. Sprinkle nutmeg on top. Bake for 45-50 minutes, or until set and golden.

Cool and Serve

Let the pudding cool for a few minutes before serving. Enjoy warm or chilled.
