Preheat your oven to 425°F (220°C). Wash the baby potatoes thoroughly and place them in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until fork-tender.

Prepare the Potatoes

Once the potatoes are cooked, drain them and let them sit for a few minutes to cool slightly. On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with the bottom of a glass or a potato masher until they are flattened but not falling apart.

Drain and Smash

Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and black pepper. Bake in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown.

In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, about 20-30 minutes.

In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced tasso ham and sauté for about 5 minutes until slightly crispy.

Add minced garlic to the skillet with the tasso ham and cook for another minute until fragrant. Then add the shrimp, salt, black pepper, and cayenne pepper. Cook for 3-4 minutes until the shrimp turn pink and opaque.

Pour in the tomato broth, bringing the mixture to a simmer. Let it cook for an additional 5 minutes to allow flavors to meld.

While the chicken is marinating, wash the collard greens thoroughly. Remove the stems and chop the leaves into bite-sized pieces. In a pot, add a small amount of water and steam the collard greens until tender, about 10-15 minutes. Season with salt and pepper to taste.

In a shallow dish, add the flour and season with additional salt, pepper, and cayenne if desired. Remove the chicken from the buttermilk marinade, allowing excess liquid to drip off, and coat each piece in the seasoned flour.

Coat the Chicken

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the chicken pieces, skin-side down, and fry for about 10-12 minutes per side or until golden brown and cooked through. Use a meat thermometer to check for an internal temperature of 165°F (74°C).

Remove the fried chicken from the oil and let it drain on a paper towel. Serve hot alongside the steamed collard greens.
