Prepare the Collard Greens
Wash the collard greens thoroughly under running water. Remove the tough stems and chop the leaves into bite-sized pieces.
Sauté the Aromatics
In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.
Cook the Collard Greens
Add the chopped collard greens to the skillet and stir to combine. Pour in the vegetable broth and add the red pepper flakes, salt, and black pepper. Bring to a simmer.
Simmer
Cover the skillet and let the collard greens simmer for about 30 minutes, or until they are tender, stirring occasionally.
Finish with Vinegar
Once the collard greens are tender, remove from heat and stir in the apple cider vinegar. Adjust seasoning if necessary.
