Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash the baby potatoes and cut them in half. Toss with olive oil, salt, and pepper.

Roast the Potatoes

Spread the potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes or until golden brown and tender.

Prepare the Bourbon Butter

In a small saucepan over medium heat, melt the butter. Add minced garlic, bourbon, salt, and rosemary. Let it simmer for a few minutes, then remove from heat.

Cook the Ribeye

Season the ribeye steaks with salt and black pepper on both sides. Heat a grill or a cast-iron skillet over high heat with a bit of olive oil. Sear the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Once the steaks are cooked, let them rest for a few minutes. Serve the ribeye with roasted potatoes, drizzle with bourbon butter, and garnish with fresh parsley.
