Prepare the Pork Skin
Start by cleaning the pork skin thoroughly to remove any hair or impurities. Cut the skin into small pieces, about 1-2 inches in size.
Season the Pork Skin
In a bowl, mix the cut pork skin pieces with salt and any optional seasonings you prefer. Make sure all pieces are well-coated.
Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Cracklins
Carefully add the seasoned pork skin pieces to the hot oil in batches. Fry them until they puff up and turn golden brown, about 3-5 minutes per batch.
Drain and Cool
Once fried, use a slotted spoon to remove the cracklins from the oil and place them on a paper towel-lined plate to drain excess oil. Allow them to cool slightly.
