Prepare the Potatoes

Preheat your oven to 425°F (220°C). Wash the baby potatoes thoroughly and place them in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until fork-tender.

Drain and Smash

Once the potatoes are cooked, drain them and let them sit for a few minutes to cool slightly. On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with the bottom of a glass or a potato masher until they are flattened but not falling apart.

Season and Bake

Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and black pepper. Bake in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown.

Garnish and Serve

Remove the potatoes from the oven, sprinkle with fresh parsley and parmesan cheese, and serve hot.
