Prepare the Yams
Peel and slice the yams into 1-inch thick rounds. Place them in a pot of boiling water and cook for about 10 minutes, or until slightly tender. Drain and set aside.
Make the Candied Sauce
In a large saucepan over medium heat, combine the brown sugar, butter, cinnamon, nutmeg, vanilla extract, and salt. Stir until the mixture is melted and bubbly.
Combine Yams and Sauce
Add the cooked yams to the saucepan with the candied sauce. Gently stir to coat the yams evenly. Cook for an additional 5-7 minutes, allowing the yams to absorb the flavors.
Prepare the Marshmallow Meringue
In a mixing bowl, beat 3 egg whites until soft peaks form. Gradually add 1/2 cup of sugar, continuing to beat until stiff peaks form. Gently fold in 1 cup of mini marshmallows.
Assemble and Bake
Transfer the candied yams to a baking dish. Spread the marshmallow meringue evenly over the top. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the meringue is golden brown.
