Make the Roux

In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, about 20-30 minutes.

Sauté the Vegetables

Add the chopped onion, green bell pepper, and celery to the pot. Sauté for about 5-7 minutes until the vegetables become soft.

Add Garlic and Sausage

Stir in the minced garlic and sliced andouille sausage, cooking for an additional 2-3 minutes.

Combine the Ingredients

Add the diced chicken thighs, shrimp, chicken broth, canned diced tomatoes, bay leaves, thyme, cayenne pepper, gumbo file', salt, and black pepper to the pot. Bring to a boil.

Simmer

Reduce the heat to low and let the gumbo simmer for at least 45 minutes, stirring occasionally.

Serve

Remove the bay leaves before serving. Serve the gumbo over buttered bay rice.
