Italian Lemon Cake

In a large pot, heat 19 liters of water to 65°C (149°F). Add 2.5 kilograms of malted barley, stirring well to ensure all the grains are wet. Maintain this temperature for 60 minutes to allow the enzymes to convert starches to sugars.

Prepare the Mash

After mashing, drain the liquid (wort) from the grains into a separate kettle. Rinse the grains with hot water to extract as much sugar as possible. You should have about 25 liters of wort.

Lautering

Bring the wort to a boil. Once boiling, add 50 grams of hops and boil for 60 minutes. This will add bitterness and aroma to your beer.

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch (add) 11 grams of yeast and seal the vessel with an airlock. Allow it to ferment at a stable temperature (around 18-22°C or 64-72°F) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve 150 grams of priming sugar in a small amount of water and add it to the beer. This will carbonate the beer in the bottles. Transfer the beer into sanitized bottles and cap them.

Bottling

Allow the bottled beer to carbonate at room temperature for 1-2 weeks. After this, refrigerate the bottles before serving.

Finely chop the yellow onion, bell pepper, and garlic cloves.
