Preparation

  1. 1

    Prepare the Ingredients

Chop the chicken breast into bite-sized pieces. Remove the casing from the Italian sausage and crumble it. Dice the bell pepper, slice the mushrooms, chop the red onion, and mince the garlic.

  2. 2

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Cooking

  1. 3

    Sauté the Chicken and Sausage

In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Add the crumbled Italian sausage and cook until browned, about 3-4 minutes.

  2. 4

    Add Vegetables

Stir in the diced bell pepper, sliced mushrooms, chopped red onion, and minced garlic. Sauté the mixture for 5-6 minutes until the vegetables are tender.

  3. 5

    Combine with Marinara

Pour in the marinara sauce and add the Greek olives. Stir well to combine and let it simmer for about 5 minutes to heat through and blend the flavors.

  4. 6

    Mix with Pasta

Add the cooked penne pasta to the skillet, tossing to combine everything. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes until everything is heated through.

Serving

  1. 7

    Serve

Serve the sautéed chicken and sausage mixture over the penne pasta in bowls. Garnish with additional Greek olives or fresh herbs if desired.
