Cooking Pasta

    Bring a large pot of salted water to a boil.

    Add the penne pasta to the boiling water and cook according to package instructions until al dente, about 10-12 minutes.

    Once cooked, reserve about 1 cup of pasta water, then drain the rest and set aside.

Preparing the Sauce

    In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 5-7 minutes.

    Add the chopped shallot and minced garlic to the skillet, cooking until softened, about 3-4 minutes.

    If using chicken, add the sliced chicken breast to the skillet and cook until no longer pink, about 5-6 minutes. If using sausage, cook until browned.

    Stir in the frozen peas and cook for an additional 2-3 minutes until heated through.

    Pour in the heavy cream and bring to a simmer, stirring frequently.

    Add the grated Asiago cheese, salt, and black pepper, stirring until the cheese has melted and the sauce is creamy, about 3-5 minutes.

Combining Ingredients

    Add the drained penne pasta to the skillet with the sauce, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
