Pasta Preparation

    Cook the Penne

    In a large pot, bring salted water to a boil. Add 2 cups of penne pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Sauté

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 teaspoons of minced garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add the zucchini, red onion, bell pepper, broccoli florets, and white mushrooms. Sauté for 5-7 minutes until the vegetables are tender but still crisp.

Sauce Preparation

    Add White Wine

    Pour in 0.5 cup of white wine and let it simmer for about 2-3 minutes until the alcohol evaporates and the sauce slightly thickens.

    Season the Sauce

    Season the mixture with 1 teaspoon of salt and 0.5 teaspoon of black pepper, stirring well to combine.

Combine and Serve

    Combine Pasta and Sauce

    Add the drained penne pasta to the skillet with the sautéed vegetables and sauce. Toss everything together to ensure the pasta is well coated.

    Finish with Parmesan

    Sprinkle 0.5 cup of grated Parmesan cheese over the pasta and toss again until melted and combined. Serve hot.
