Making the Ravioli Dough

Prepare the dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a rough dough forms.

Knead the dough
Transfer the dough to a floured surface and knead it for about 8-10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Preparing the Cheese Filling

Mix the filling ingredients
In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg yolk, salt, black pepper, and chopped basil. Mix until well combined and set aside.
Assembling the Ravioli

Roll out the dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour to prevent sticking.

Fill and shape the ravioli
Place teaspoons of cheese filling about 2 inches apart on one sheet of dough. Brush around the filling with water, then place another sheet of dough on top, pressing down to seal. Cut out individual ravioli using a knife or a ravioli cutter.
Cooking the Ravioli

Cook the ravioli
Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Finish the sauce
Stir in the torn basil and adjust seasoning if needed. Remove from heat.
Serving

Plate the dish
Serve the cooked ravioli topped with marinara sauce. Garnish with additional fresh basil and Parmesan cheese, if desired.
