Divide the mixture into equal portions and shape them into elongated patties or skewers, ensuring they hold together.

Shape the Kebabs

Heat a grill or grill pan over medium-high heat. Brush the kebabs with olive oil and cook for about 4-5 minutes on each side until they are well-browned and cooked through.

Warm the pita or flatbread, then place the cooked kebabs inside. Add your choice of toppings such as lettuce, tomatoes, onions, and a drizzle of yogurt or tahini sauce.

Prepare the Cherries

In a blender, combine the pitted cherries, water, sugar, and fresh lemon juice. Blend until smooth.

Pour the blended mixture through a fine mesh strainer or cheesecloth into a pitcher to remove the pulp.

Strain the Juice

Pour the cherry juice over ice cubes in glasses and enjoy your refreshing Turkish cherry juice!

Wash and peel the peaches, then chop them into small pieces.

Prepare the Peaches

Remove the saucepan from heat and let it cool slightly. Pour the peach mixture into a blender and blend until smooth.

Using a fine mesh strainer or cheesecloth, strain the blended mixture into a large bowl or pitcher to remove the pulp.

Stir in the lemon juice and pineapple juice. Mix well.

Refrigerate the juice for at least 1 hour to chill. Serve over ice and garnish with fresh mint leaves if desired.

Soak the almonds in water for at least 4 hours or overnight. After soaking, peel the skins off and roughly chop the almonds.

Prepare the Almonds

In a medium saucepan, combine the milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves, stirring occasionally.

Make the Pudding Base

In a small bowl, mix the cornstarch with a few tablespoons of cold milk to create a slurry. Once the milk mixture on the stove is hot, slowly whisk in the cornstarch slurry while stirring continuously. Continue to cook until the mixture thickens.

Thicken the Mixture

Remove the saucepan from heat and stir in the chopped almonds and vanilla extract. Mix well to combine.

Pour the almond pudding into individual serving dishes or a large bowl. Let it cool at room temperature for a bit, then cover and refrigerate for at least 2 hours or until set.

Prepare Chicken Kebab

Preheat the grill to medium-high heat. Grill the marinated lamb chops for about 4-5 minutes on each side or until they reach your desired doneness. At the same time, grill the chicken kebabs for about 10-12 minutes, turning occasionally, until fully cooked.

Once cooked, remove the lamb chops and chicken kebabs from the grill. Let them rest for a few minutes before serving. Enjoy your Pirzola & Tavuk with a side of rice or salad.

In a large earthenware casserole dish, combine the sautéed vegetables with the green beans, chopped tomatoes, salt, black pepper, and thyme. Mix well to ensure all ingredients are coated with the seasoning.

Cover the casserole dish with a lid or aluminum foil and bake in a preheated oven at 180°C (350°F) for 40-45 minutes, or until the vegetables are tender.

Form the mixture into oval or cylindrical patties, about 2 inches long and 1 inch thick.

Grill or pan-fry the patties over medium-high heat for about 4-5 minutes on each side, or until cooked through and browned.

While the patties are cooking, melt butter in a skillet over medium heat. Add the pita bread and sauté until golden and slightly crispy, about 2-3 minutes on each side.

Season the lamb shanks with salt and black pepper.

Prepare the Lamb

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb shanks and sear on all sides until browned. Remove from the pot and set aside.

Sear the Lamb

In the same pot, add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

Sauté Vegetables

Stir in the tomato paste and cook for 1 minute. Pour in the red wine, scraping the bottom of the pot to deglaze.

Deglaze the Pot

Return the lamb shanks to the pot. Add the beef or lamb broth, rosemary, and thyme. Bring to a simmer.

Cover the pot and reduce the heat to low. Let it cook for 2 to 3 hours, or until the lamb is tender and falling off the bone.

Slow Cook

Remove the lamb shanks from the pot and let them rest for a few minutes. Serve with the sauce poured over the top.
