Prepare the Apricots
Wash the fresh apricots under running water. Cut them in half and remove the pits.

Cook the Apricots
In a large saucepan, combine the apricot halves, water, and granulated sugar. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.

Simmer
Once boiling, reduce the heat to low and let it simmer for about 20 minutes, until the apricots are soft.

Blend the Mixture
Remove the saucepan from heat and allow it to cool slightly. Use a blender to puree the mixture until smooth.

Strain the Juice
Strain the pureed mixture through a fine-mesh sieve or cheesecloth into a large bowl to separate the juice from the pulp.

Add Lemon Juice
Stir in the lemon juice to enhance the flavor of the juice.

Refrigerate the juice for at least 2 hours. Serve chilled and garnish with fresh mint leaves.
