Stuffed Mushrooms

In a large brew kettle, heat 15 liters of filtered water to approximately 70°C (158°F). Add the Pale Malt and Crystal Malt to the water.

Prepare the Mash

Stir the grains well and maintain the mash temperature at around 65°C (149°F) for about 60 minutes. This allows the enzymes in the malt to convert starches into sugar.

After mashing, sparge (rinse) the grains with an additional 5 liters of hot water to extract more sugars.

Sparging

Bring the collected wort to a vigorous boil. Once boiling, add the bittering hops (50g). Boil for 60 minutes.

With 10 minutes left in the boil, add the aroma hops (25g). This adds fragrance to the beer.

After boiling, quickly cool the wort using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the ale yeast. Seal the vessel with an airlock.

Allow the beer to ferment in a cool, dark place for about 1-2 weeks, or until fermentation activity appears to have stopped.

Clean and sanitize your bottles and caps. Prepare a priming sugar solution if you want carbonation.

Siphon the beer into the bottles, leaving about an inch of headspace. Cap the bottles securely.

Bottle the Beer

Store the bottles at room temperature for about 1-2 weeks to allow carbonation to develop.

Choose a selection of red, white, and sparkling wine. Each should be around 750 ml for a full serving in 4 goblets.

Select Your Wines

Wash the mint leaves, and slice the lemon and orange into thin rounds. You will need 2 slices of each fruit.

Prepare Garnishes

Begin by pouring approximately 187.5 ml (1/4 of the bottle) of red wine into each goblet, followed by 187.5 ml of white wine. If desired, top off each goblet with a splash of sparkling wine.

Pour the Wine

Add a fresh mint leaf to each goblet, followed by a slice of lemon and a slice of orange for added aroma and flavor.

Garnish the Goblets

Serve immediately, encouraging guests to enjoy the different flavors of each wine served in their goblet.

In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the egg mixture until a dough forms.

Make the Dough

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

In a skillet over medium heat, add the minced garlic and sauté until fragrant, about 1 minute. Add the shrimp and scallops; cook until they are just opaque, about 3-4 minutes. Remove from heat and let cool slightly.

Prepare the Filling

In a bowl, combine the cooled seafood, cream cheese, chopped parsley, lemon juice, salt, and black pepper. Mix until well combined.

Divide the rested pasta dough into four pieces. Roll out one piece on a floured surface to about 1/16 inch thickness. Keep the remaining dough covered.

Place teaspoonfuls of the seafood filling about 1 inch apart on one half of the rolled-out dough. Brush the edges with water, fold the dough over the filling, and press to seal. Cut into squares with a pasta cutter or knife.

Shape the Ravioli

Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes until they float to the surface. Remove with a slotted spoon and drain.

In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute. Slowly stir in the heavy cream and bring to a gentle simmer.

Preheat Oven

In a skillet over medium heat, add the fresh spinach and minced garlic. Sauté until the spinach is wilted, about 3-4 minutes. Remove from heat and let cool slightly.

In a mixing bowl, combine the cream cheese, sautéed spinach, lemon juice, grated Parmesan cheese, salt, and black pepper. Mix well until smooth and creamy.

Stuff each salmon fillet with the prepared filling, pressing gently to ensure it is well packed inside.

Place the stuffed salmon fillets on a lightly greased baking sheet. If using, place lemon slices on top of the fillets. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

Remove the salmon from the oven and let it rest for a few minutes. If desired, sprinkle chopped fresh dill over the top before serving.

Preheat the Oven

Pat the Norwegian seabass fillets dry with paper towels. Rub the fillets with olive oil, then season both sides with salt and black pepper. Drizzle lemon juice over the top.

Place the seasoned seabass fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes or until the fish flakes easily with a fork.

In a large pot, bring water to a boil. Add the salt to the water to enhance the flavor of the pasta.

Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of the pasta water.

Rinse the yellowfin tuna under cold water and pat it dry with paper towels. Cut the tuna into thick steaks, about 1 inch in thickness.

In a bowl, combine the olive oil, lemon juice, minced garlic (finely chopped), salt, and black pepper. Whisk until well mixed.
