Cooking Pasta
Boil Water
Fill a large pot with water, add salt, and bring to a rolling boil over high heat.
Cook Spaghetti
Add the spaghetti to the boiling water and cook according to the package instructions until al dente, usually about 8-10 minutes.
Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti in a colander.
Preparing Sauce
Cook Pancetta
In a large skillet over medium heat, add the diced pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside.
Mix Eggs and Cheese
In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.
Combine Ingredients
Add the drained spaghetti to the skillet with pancetta. Toss to combine, allowing the residual heat to slightly cool the pasta.
Add Egg Mixture
Quickly pour the egg and cheese mixture over the spaghetti while tossing continuously to create a creamy sauce. If needed, add reserved pasta water a little at a time to achieve desired creaminess.
Season with Pepper
Add black pepper to taste and toss again to combine. Adjust seasoning as necessary.
