Method

Cooking Pasta

1

Boil Water

In a large pot, bring water to a boil. Add the salt to the water to enhance the flavor of the pasta.

2

Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

3

Drain Pasta

Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of the pasta water.

Making the Sauce

4

Heat Olive Oil

In a large skillet over medium heat, add the olive oil. Allow it to warm up for about 1 minute.

5

Sauté Garlic

Add minced garlic to the skillet and sauté for about 1 minute until fragrant but not browned.

6

Add Red Pepper Flakes and Tomatoes

Stir in the crushed red pepper flakes and halved cherry tomatoes. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

7

Add Spinach

Add the fresh spinach to the skillet. Stir until wilted, about 2-3 minutes.

8

Combine Pasta and Sauce

Add the drained pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.

9

Finish with Cheese and Seasonings

Stir in the grated Parmesan cheese, and season with black pepper to taste. Add chopped basil just before serving.
