Method
Cook Pasta
Boil Water
Fill a large pot with water, add a pinch of salt, and bring it to a rolling boil.
Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes.
Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of pasta water and set it aside.
Drain Spaghetti
Drain the spaghetti in a colander and return it to the pot off the heat.
Prepare Sauce
Cook Pancetta
In a skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.
Whisk Eggs and Cheese
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combine
Add Reserved Pasta Water
If the sauce is too thick, gradually add reserved pasta water a little at a time, stirring until the desired creaminess is achieved.
Season
Taste and season with additional salt or pepper if needed.
Serve
Plate the Dish
Divide the spaghetti carbonara among serving plates.
Garnish
Sprinkle with chopped fresh parsley and additional Parmesan cheese if desired, and serve immediately.
