Prepare the Zucchini

Preheat your oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the seeds and some flesh using a spoon, creating boats for the filling.

Prepare the Filling

In a large skillet, heat a bit of oil over medium heat. Add diced onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.

Cook the Ground Beef

Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat.

Mix in Other Ingredients

Stir in cooked rice, tomato sauce, Italian seasoning, salt, and black pepper into the beef mixture. Cook for an additional 2-3 minutes until heated through.

Stuff the Zucchini

Spoon the beef and rice mixture into each zucchini half, packing it down gently. Top each stuffed zucchini with grated Parmesan cheese.

Bake the Stuffed Zucchini

Place the stuffed zucchinis in a baking dish and cover with foil. Bake in the preheated oven for 25 minutes.

Add Mozzarella and Basil

Remove the foil, sprinkle the shredded mozzarella cheese over the top of each stuffed zucchini, and return to the oven. Bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
