Panna Cotta Preparation
Prepare the Gelatin
In a small bowl, combine the gelatin powder with 3 tablespoons of water. Let it sit for about 5 minutes until it blooms.
Combine Cream and Sugar
In a medium saucepan over medium heat, whisk together the heavy cream, whole milk, and granulated sugar. Heat until the sugar dissolves and the mixture is hot but not boiling.
Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin, mixing until the gelatin is fully dissolved.
Pour into Molds
Pour the mixture into individual serving cups or molds. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Berry Sauce Preparation
Cook the Berries
In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally until the berries break down and the sauce thickens slightly.
Cool the Sauce
Remove from heat and let the berry sauce cool to room temperature. If desired, strain the sauce to remove seeds for a smoother texture.
Serve
Once the panna cotta has set, carefully remove it from the molds and serve topped with the berry sauce.
