In a medium pot, combine quinoa and brown rice. Add 4 cups of water and bring to a boil. Reduce to a simmer, cover, and cook for about 20 minutes, or until grains are tender and water is absorbed.

In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and salt to taste.

Once the kombu is softened, drain and rinse it under cold water. Cut it into bite-sized pieces and combine it with the cucumber, carrot, and green onions in a salad bowl.

Pour the dressing over the salad and toss gently to combine. Sprinkle sesame seeds on top.

Serve immediately or let it chill in the refrigerator for 15 minutes before serving.
