Prepare the Peas

Rinse the dried split peas under cold water and set aside.

Sauté Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes.

Cook the Peas

Add the rinsed split peas, vegetable broth, ground cumin, salt, and black pepper to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for about 30-40 minutes, or until the peas are tender.

Finish the Dish

Once the peas are cooked, stir in the chopped parsley. Adjust seasoning if necessary. Remove from heat.

Serve

Spoon the African peas into bowls and serve warm. Optionally, gift wrap in a decorative container for gifting.
