Preparation Steps
Melt the Cacao
In a double boiler, melt the white cacao beans gently until smooth. Stir frequently to avoid burning.
Mix Liquid Ingredients
In a separate bowl, combine the coconut milk, fresh lime juice, maple syrup, and vanilla extract. Mix well.
Combine Mixtures
Once the cacao is melted, slowly add the liquid mixture to the melted cacao, stirring constantly until fully combined.
Add Puree and Pecans
Fold in the raspberry puree and chopped pecans gently into the mixture. Add a pinch of salt to enhance the flavors.
Set the Dessert
Pour the mixture into serving cups or a mold and refrigerate for at least 2 hours or until set.
Serve
Once set, garnish with additional raspberries and lime zest if desired, and serve chilled.
