1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool slightly and mix with a splash of rice vinegar.
2. Prepare the Fillings
In a bowl, mix the diced salmon with 1 tablespoon of spicy mayo. In another bowl, combine the diced tuna with the remaining spicy mayo.
3. Assemble the Roll
Lay a nori sheet on a bamboo sushi mat. Spread an even layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place the avocado slices and the spicy salmon mixture in the center of the rice.
4. Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
5. Add the Spicy Tuna
Slice the roll into pieces and top each piece with a small amount of the spicy tuna mixture. Garnish with sesame seeds and chopped green onions.
6. Serve
Serve the Buckeye Roll with soy sauce and wasabi on the side.
