    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions. Once done, let it sit covered for 10 minutes.

    Season the Rice

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar and salt dissolve. Pour this mixture over the cooked rice and fold gently to combine. Allow it to cool to room temperature.

    Prepare the Toppings

    While the rice is cooling, slice the fresh salmon and tuna into thin sashimi-style slices. If using whole shrimp, slice them in half lengthwise.

    Assemble the Chirashi Sushi

    In a large bowl or platter, spread the seasoned rice evenly. Arrange the assorted fish, cucumber slices, nori strips, and pickled ginger on top of the rice.

    Garnish and Serve

    Sprinkle toasted sesame seeds over the top. Serve with soy sauce and wasabi on the side for dipping.
