1. Prepare the Sushi Rice

Rinse the sushi rice in cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, mix rice vinegar, sugar, and salt into the rice while it's still warm. Let it cool to room temperature.

2. Prepare the Fillings

Slice the fresh salmon into thin strips. Julienne the cucumber and slice the avocado into thin pieces.

3. Make Spicy Mayo

In a small bowl, combine the Sriracha sauce and mayonnaise. Mix well to create a spicy mayo.

4. Assemble the Rolls

Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving about 1 inch of space at the top. Lay the salmon, cucumber, and avocado across the center of the rice. Drizzle some spicy mayo on top.

5. Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

6. Slice and Serve

Using a sharp knife, slice the roll into bite-sized pieces. Sprinkle sesame seeds on top and serve with soy sauce.
