Prepare the Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice. Let it cool to room temperature.

Prepare the Fillings
Slice the avocado and sashimi-grade salmon into thin strips. Cut the eel into bite-sized pieces.

Assemble the Dragon Roll
Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Layer the eel, avocado, and salmon in the center of the rice.

Roll the Sushi
Using the bamboo mat, roll the sushi away from you, pressing gently to form a tight roll. Use a bit of water to seal the edge of the nori.

Top with Masago
Gently place the roll on a cutting board. Spread a thin layer of masago over the top of the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce and wasabi on the side.
