    Sear the Pork

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the pork shanks with salt and pepper, then sear them in the hot oil until browned on all sides. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrot, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Flavorings

    Stir in the tomato paste and cook for another 2 minutes. Then, pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Braise the Pork

    Return the pork shanks to the pot, add the broth, bay leaves, and thyme. Bring to a boil, then reduce the heat to low and cover. Let it simmer for 2-3 hours, or until the meat is tender.
