Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until softened, about 3-4 minutes.

Add the Italian sausage to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

Stir in the fresh spinach, cooking until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Combine Ingredients
In a large bowl, combine the cooled sausage and spinach mixture, softened cream cheese, shredded mozzarella, grated Parmesan, salt, and black pepper. Mix until well combined.

Prepare the Loaf
Preheat your oven to 375°F (190°C). Cut the top off the bread loaf and hollow out the inside, leaving a 1-inch border. Save the removed bread for another use.

Fill the Loaf
Spoon the spinach and sausage mixture into the hollowed-out bread loaf, packing it in tightly.

Bake
Place the filled loaf on a baking sheet and bake in the preheated oven for 25-30 minutes, until the bread is golden and the filling is heated through.

Let it cool for a few minutes before slicing. Serve warm as an appetizer or main dish.
