1. Cook the Linguine
In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
2. Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the diced tomatoes and cook for about 5 minutes until softened.
3. Make it Creamy
Reduce the heat to low, and stir in the heavy cream and lemon juice. Allow the mixture to simmer for about 3-4 minutes, stirring occasionally, until slightly thickened.
4. Combine Everything
Add the cooked lobster meat to the sauce and stir to combine. If the sauce is too thick, add some reserved pasta water to reach your desired consistency. Season with salt and black pepper to taste.
5. Mix with Pasta
Add the cooked linguine to the skillet and toss to coat the pasta evenly with the lobster sauce. Stir in the grated Parmesan cheese until well combined.
6. Serve
Plate the lobster linguine, garnish with chopped fresh parsley, and serve immediately with extra Parmesan on the side.
