In a bowl, combine buttermilk and catfish fillets. Let them marinate for at least 30 minutes.

Marinate Catfish

In a shallow dish, mix together cornmeal, flour, cayenne pepper, salt, and black pepper.

Prepare Breading

Remove catfish from buttermilk and allow excess to drip off. Dredge each fillet in the cornmeal mixture until well coated.

In a large skillet, heat vegetable oil over medium-high heat until hot.

Carefully place catfish fillets in the hot oil and fry for 4-5 minutes on each side or until golden brown and cooked through.

In a large bowl, combine coleslaw mix, mayonnaise, vinegar, and sugar. Mix well and refrigerate until serving.

In a saucepan, bring water to a boil, add green beans, and cook for 5-7 minutes until tender. Drain and toss with butter.

Peel and cube the sweet potatoes. Boil them in salted water until tender, about 15 minutes. Drain and mash with 1 tablespoon of butter, salt, and pepper to taste. Set aside.

Prepare the Sweet Potatoes

In a skillet, heat olive oil over medium heat. Add chopped collard greens and sauté until wilted, about 5-7 minutes. Season with salt and pepper, then set aside.

Cook the Collard Greens

Cook macaroni according to package instructions. In a saucepan, melt 3 tablespoons of butter, whisk in flour and cook for 1 minute. Gradually add milk, stirring constantly until thickened. Add cheddar cheese and stir until melted. Combine with cooked macaroni.

Preheat your smoker or oven to 250°F (120°C). Carefully debone the turkey legs, leaving the skin intact. Season the inside of the leg with salt, pepper, garlic powder, and smoked paprika.

Layer the mac and cheese, collard greens, and mashed sweet potatoes inside each turkey leg. Use kitchen twine to tie the ends of the legs to secure the stuffing.

Place the stuffed turkey legs in the smoker or oven. Smoke for 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).
