Prepare the Sweet Potatoes
Peel and cube the sweet potatoes. Boil them in salted water until tender, about 15 minutes. Drain and mash with 1 tablespoon of butter, salt, and pepper to taste. Set aside.

Prepare the Turkey Legs
Preheat your smoker or oven to 250°F (120°C). Carefully debone the turkey legs, leaving the skin intact. Season the inside of the leg with salt, pepper, garlic powder, and smoked paprika.

Stuff the Turkey Legs
Layer the mac and cheese, collard greens, and mashed sweet potatoes inside each turkey leg. Use kitchen twine to tie the ends of the legs to secure the stuffing.

Smoke the Turkey Legs
Place the stuffed turkey legs in the smoker or oven. Smoke for 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Serve
Remove from the smoker and let rest for 10 minutes. Slice and serve warm.
