Preparing the Catfish

Marinate Catfish
In a bowl, combine buttermilk and catfish fillets. Let them marinate for at least 30 minutes.

Prepare Breading
In a shallow dish, mix together cornmeal, flour, cayenne pepper, salt, and black pepper.

Coat Catfish
Remove catfish from buttermilk and allow excess to drip off. Dredge each fillet in the cornmeal mixture until well coated.
Cooking the Catfish

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry Catfish
Carefully place catfish fillets in the hot oil and fry for 4-5 minutes on each side or until golden brown and cooked through.

Drain
Remove catfish from the skillet and place on paper towels to drain excess oil.
Preparing the Sides

Make Coleslaw
In a large bowl, combine coleslaw mix, mayonnaise, vinegar, and sugar. Mix well and refrigerate until serving.

Plate the Dish
Serve the fried catfish with a side of coleslaw and green beans. Add a slice of cornbread on the side.
