Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually whisk in the beer until the batter is smooth and well combined.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Crawfish Tails
Dip the crawfish tails in the batter, making sure they are well coated.

Fry the Crawfish Tails
Carefully place the battered crawfish tails into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.

Drain and Toss
Remove the fried crawfish tails from the oil and drain on paper towels. In a large bowl, toss the fried tails with the Voodoo sauce until well coated.

Serve the Voodoo crawfish tails hot with your choice of ranch or bleu cheese dressing on the side.
