Dill Hollandaise Sauce

Method

Preparing the Tuna

    Season the Tuna

    In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub the spice mixture evenly over both sides of the tuna steaks.

    Sear the Tuna

    Heat olive oil in a skillet over medium-high heat. Once hot, add the tuna steaks and sear for 2-3 minutes on each side, or until the desired doneness is reached. Remove from heat and set aside.

Making the Dill Hollandaise

    Prepare the Sauce

    In a heatproof bowl, whisk together egg yolks, lemon juice, and Dijon mustard. Place the bowl over a pot of simmering water (double boiler method) and continue whisking until the mixture is thick and pale.

    Add Butter

    Slowly drizzle in melted butter while whisking continuously until the sauce is smooth and creamy. Stir in chopped dill and season with salt and black pepper to taste.

Serving

    Plate the Dish

    Place the seared tuna steaks on a plate and generously spoon the dill hollandaise sauce over the top. Serve immediately.
